Angus Beef

Angus cattle originated in the Aberdeen and Angus counties of Scotland and were introduced to the United States in 1873. They are the most common breed of cattle in the United States.
While Angus is the BEST AMERICAN BEEF – you simply cannot look at a Black Cow and determine if she is in fact a Black Angus – ALL Black Cows are NOT Black Angus. To ensure that we have the best we commenced our herd by selecting our cattle originating from the TOP THREE BREEDERS of Angus cattle in the United States; Connealy Ranch, GAR Ranch and SAV Ranch.

To access and maintain the best Black Angus Meat available in the our local market place we purchase and inseminate our cows with semen from Bulls that are nationally known and were sold for $100,000 to over a MILLION dollars. This allows us to obtain the best Bulls without owning the best Bulls. Our Steers and Heifers, Under 30 Months of Age, normally grade Prime or Choice at a minimum.

WE DO NOT SELL GRASS FINISHED ANIMALS. WHY?
Many persons desire this type of meat because of things they have read or things that some sellers of BEEF want to promote. In our opinion it is TOUGH, STRINGY AND HAS A WILD GAME TASTE.

Angus beef develops with better marbling (the amount of intramuscular fat) than most cattle. A significant number of people agree that marbling improves flavor, tenderness, and keeps meat moist while cooking, especially at high temperatures.

We only sell what we eat! GRASS & HAY GRASS FED beef that has been GRAIN FINISHED for sixty (60) to ninety (90) days. This is the only way that you can get marbling into the meat. These meats are always fresh and never frozen. USDA states that meat is not frozen until it reaches the temperature of 27 degrees (not 32 – as we think of as freezing.)

These Animals are available as ½ or Whole. We sell them to you direct and we take the animal to the processor – FREE of charge for transportation. We will assist you, if you so desire, in preparing your CUT SHEET to make sure that you receive what you want and how you want it shrink wrapped and in the quantities and thickness you desire. Individual cuts may be available at Ivy Log Meat Processing, just ask for Skeenah Gap ANGUS Beef.

Prime Meat such as you see in our photo just doesn’t happen, it is planned for and developed.
