Our Hog Breeds
Berkshire – Berkshire pork is highly regarded for its flavor and quality, and is sometimes called “the Kobe beef of pork” or “the Wagyu of pork”.
Large Black – The Large Black is a “bacon” breed – bred for its long back and belly with a higher meat to fat ratio than your “lard” breeds. The Large Black boasts a darker color in the meat. The pork is lean with micro marbling throughout.
Tamworth – Tamworths are traditionally considered the best “bacon hog”. They produce lean, fine-grained bacon and meat that is rich in omega 3 amino acids and linoleic acid, which can help lower cholesterol.
Red Wattle – They produce well-marbled, flavorful meat that is described as tasting sweet, buttery and earthy, with a subtle spice and a hint of cinnamon.
